MASCARPONE
Hailing from Italy’s Lombardy region, mascarpone is a buttery-rich double cream to triple cream cow’s milk cheese. A double cream is a cow’s milk cheese that has been enriched with cream so that it contains a minimum of 60% milk fat; a triple cream cheese must have at least 72% milk fat. Mascarpone is ivory-colored, soft and delicate, and ranges in texture from that of a light clotted cream to that of room-temperature butter. It’s versatile enough to be blended with other flavors, even in desserts, but in truth, this delicately flavored cheese needs little embellishment.
